My husband claims to hate cauliflower. So when I saw that it would be rearing its delicious head in our weekly produce box, I offered to sub it out. (This is an option with our box.) But he said to go ahead and see if I can cook it in a way to make him like cauliflower. Challenge accepted!
Peel and chop one potato.
Chop one head of cauliflower.
Toss potato, cauliflower and one clove of garlic in olive oil in a roasting pan. Roast at 350 degrees until tender and browning.
Puree vegetables in batches along with one box of low-sodium chicken broth. Pour into a pot and heat at medium-low heat.
Optional: Add 2-3 Tbsp. butter and 1/4 cup cream.
Add salt and pepper to taste.
The longer it simmers, the more the flavors blend together. Top with crispy bits of bacon (optional but why skip this delicious step?)
