My husband claims to hate cauliflower. So when I saw that it would be rearing its delicious head in our weekly produce box, I offered to sub it out. (This is an option with our box.) But he said to go ahead and see if I can cook it in a way to make him like cauliflower. Challenge accepted! Peel and chop one potato. Chop one head of cauliflower. Toss potato, cauliflower and one clove of garlic in olive oil in a roasting pan. Roast at 350 degrees until tender and browning.
